Crémant d'Alsace Extra Brut Zero Dosage classic method, 12% ABV, produced by Dopff & Irion Chateau Riquewihr in Alsace. 0.75 L bottle. A dry and lively sparkling wine, with no added sugar, that expresses the freshness and complexity of the Alsatian terroir. The nose is elegant and complex, with floral notes of hawthorn and acacia, pear, and verbena. Fine and regular bubbles, pale gold in color. On the palate, the fine bubbles sparkle, with a very long finish. Ideal with fish dishes and cheeses.

At the end of the war, two of the biggest names in viticulture in Riquewihr, René Dopff and the widow Irion, joined forces to found Dopff & Irion. One of their first decisions was to acquire Riquewihr's historic chateau. | Wine making | The grapes for the cremant are harvested early to ensure the freshness and elegance of the base wine. They are then pressed into whole bunches and only the juice obtained is kept under low pressure. The first alcoholic fermentation takes place in thermoregulated stainless steel vats. |
| Aging | The best base wines are then blended and prepared for the second fermentation in the bottle where they remain sur lattes in the cellar for at least 24 months, during which time the wines gain in volume and complexity. The bottles are then assembled and disgorged according to the traditional method without the addition of any disgorging liqueur, in order to preserve the dry and lively character of the base wine. |
