Still organic white Côtes du Jura, produced by Domaine Pignier. 13% ABV, 100% Savagnin, 2016 vintage. A Vin Jaune that tells the story of a unique terroir, with an aging process that makes it unmistakable. The French Revolution forced the monks into exile. Their cellar and vineyards were sold to our family as national property in 1794. Aged in 228-liter oak barrels under a layer of yeast for six and a half years, without topping up or racking, to develop its powerful nutty and spicy flavors. Fine and powerful, with notes of dried fruit (walnuts) and citrus. Golden yellow. Powerful and elegant, smooth wine with nutty notes and a lovely finish.

Today’s 37-acre vineyard still covers the slopes of Montaigu in the Côtes du Jura appellation area. In keeping with our estate’s philosophy, the vineyard is cultivated biodynamically and the wines age in oak barrels in the 700-year-old cellar. We, Marie Florence, Antoine and Jean Etienne Pignier are today perpetuating our family tradition.
