What kind of wine it is

The Bianc ‘d Bianc Alta Langa Brut by Cocchi is an elegant Traditional Method sparkling wine that enhances the finesse of Chardonnay. With its straw yellow colour animated by a fine and continuous perlage, it reveals a bouquet of white fruits and apricot. The palate is full, creamy and savoury, with delicate hints of white chocolate. Thanks to its low dosage, it is ideal for accompanying tartare and seafood starters.

Where it comes from

It originates from the hills of Alta Langa, in Piedmont. The vineyards are situated at optimal altitudes on white marl-limestone soils, which are essential for giving the wine its solid structure. The Cocchi winery enhances this ecosystem by maintaining low yields in the rows. The soil imparts a vibrant minerality and excellent ageing potential to the grapes.

How it is produced

After manual harvesting, only the free-run must is obtained, which is fermented in steel vats. This is followed by a period of resting on fine lees and then the prise de mousse using the Traditional Method. The slow ageing on the lees for five years enriches the wine in terms of complexity and volume. Finally, manual riddling and disgorgement à la glace ensure perfect final clarity.

Founded in 1891, the Cocchi winery celebrates the excellence of Alta Langa DOCG with Bianc ‘d Bianc. This elegant special cuvée is a pioneer of the region, being the first to exclusively showcase pure Chardonnay. Produced with grapes from the 2018 harvest, the wine matures for five years on the lees, acquiring extraordinary longevity. Awarded 93 points by Decanter, it faithfully follows the most authentic traditional method through meticulous manual riddling and the traditional disgorgement on ice.

There, fascinated by the local food and wine tradition, he discovered Asti as being the capital of Moscato and the local wide-spread attitude to blend wines with herbs and spices. In 1891 Giulio Cocchi based there his activity as a distiller and sparkling wine maker. He was able to offer a range of special aromatized wine. Particularily Barolo Chinato, Aperitivo Americano and a few different Vermouths became well known and very successful quite soon. Giulio Cocchi had the great idea of establishing authorized retailers where people could taste his products. In 1913 there were seven Cocchi tasting Bars in Piemonte that soon became twelve.

Giulio Cocchi completaCocchi’s original products and recipes was well-known during Belle Epoque and on the versatile scene of the Futurist period. Cocchi’s products and name were soon spreading worldwide, as shown by exportation documents to New York, London, Sydney, Colonial Africa and Venezuela, where the "Casa Cocchi de Venezuela" was founded and run for a long while in Caracas.

Since 1978, Giulio Cocchi is owned and operated by the Bava Family, themselves highly renowned wine producers in Monferrato and Langhe. Today the winery still maintains its artisan character and follows the original recipes, formulated by Giulio Cocchi in 1891, to craft the distinctive wines that have made the Cocchi a cult name. Among the results of last 30 years, the defense of Barolo Chinato from forgetfulness and the relaunch of Vermouth di Torino category. Storico Vermouth di Torino since 2011 has been the driving force for the rebirth of the top-of-the-range Vermouth di Torino on the international scene. Not to be forgotten the attention for the sparkling wines, with the committment for the valorization of Alta Langa DOCG.

With more than a century of uninterrupted activity behind it, Giulio Cocchi is registered in the National Register of Historic Enterprises.

Ideal as an aperitif, this Alta Langa DOCG enhances light seafood starters, tartares and prawn salads. Its pronounced savouriness pairs beautifully with seafood risottos, fresh cow's milk cheeses and white meats. It is recommended to serve it at 6-10°C in a tulip glass to best appreciate its enveloping effervescence.

Wine making The yield is limited: from 5,500 kg of grapes, 3,000 litres of Chardonnay free-run juice are obtained. Fermentation takes place only in steel vats for almost three weeks; at the end, the wine rests on fine lees. The cuvée is created at the end of winter with wines strictly from a single vintage.
