Wine making | Traditional 'Metodo Classico' in compliance with the specifications. Pressing is followed by white vinification typical for high-quality sparkling wine bases, which preserves the colour of the variety. Fermentation takes place in steel vats at a controlled temperature of approximately 18° C and the wine then remains on the lees until shortly before drawing, which takes place the following spring. |
