Perfume Intense impact of orange blossom and dried herbs on the nose, then come notes of slightly oxidised rennet apple, candied orange and citrus zest. On the finish there are smoky notes of burnt straw on chalk ore.
Taste On the palate, an explosive wine in its nuances of balance between freshness and savouriness: it moves between aromatic herbs, citron peel and bergamot and spices. Slight astringent sensation due to the presence of fine tannins in the aftertaste, with more marked oxidative and wild notes. A very gastronomic sparkling wine with a taut and persistent finish.
Production method At the prise de mousse, I did not want to filter or clarify the wines; the liqueur was also unfiltered, so as to retain the sensation of my perpetual cuvée. So expect a colour that veers towards amber tones and a sip underpinned by an engaging acidity.

Extra Brut Classic Method sparkling wine, produced by Buvoli - L'Opificio del Pinot Nero. VSQ. A Classic Method Blanc de Noirs, made from Pinot Noir grapes, with a vinification process that includes aging in wood using the Perpétuelle method. On the nose, an intense impact of orange blossom and dried aromatic herbs is followed by notes of slightly oxidized Rennet apple, candied orange, and citrus zest. The finish reveals smoky notes of burnt straw over chalky minerality. On the palate, this wine is explosive in its nuanced balance between freshness and savory flavors.
