Description

Soffocone di Vincigliata, a provocative yet highly regarded wine, takes its name from a legend surrounding the White Lady, who is believed to still haunt the castle of Vincigliata, in the fertile lands surrounding Fiesole. Harmonious and persistent, this still red from the Bibi Graetz winery (a famous local winery) is composed of 90% Sangiovese, 7% Canaiolo Nero, and 3% Colorino, preferring soils with granitic sand or granite rocks. A multi-varietal blend, therefore, with a careful blend of elements and flavors, characterized by classic espalier training with Guyot pruning. Sangiovese is one of the most widespread Italian grape varieties in Tuscany and presents no particular difficulties in its cultivation, as do Colorino and Canaiolo Nero—better known as Cannaiolo. Vinification takes place in steel vats with daily manual punching down, and after alcoholic fermentation, the wine rests for a full eighteen months; this is how long it ages in barriques. The red Soffocone di Vincigliata, IGT Toscano, has a 40-year history behind it, marked by achievements and innovations, while always adhering to tradition. Care, attention, and delicacy, blended with skill and attention, from cultivation to fermentation, create a unique product, unsurpassed in its genre, a must-have in the cellars of connoisseurs.
