Mehr als zwanzig Jahre sind seit der Gründung von Baglio di Pianetto vergangen: sie werden mit den Ernten, mit dem Wein, mit der im Weinberg erreichten produktiven Reife erzählt und deren Ziel ist - immer - eine Weinproduktion von hohem Kaliber, wo ein Gleichgewicht zwischen Tradition und Innovation besteht und erreicht wird. Diese besondere Harmonie geht unweigerlich durch den Respekt für die Integrität der ausgezeichneten Rohstoffe, in einem parallelen Rahmen der Optimierung der natürlichen Ressourcen, die diese Gebiete - unterschiedlich und gegensätzlich - Charakter ausdrücken. Ein Prozess im Namen der technologischen Avantgarde, der jedoch nicht vergisst, dass der Wein im Weinberg und nicht im Weinkeller geboren wird und sich entwickelt. Es ist das Bewusstsein der eigenen Geschichte, das die Verbindung von Baglio di Pianetto mit den von ihm gewählten Gebieten, dem Umland von Palermo und dem Val di Noto, aufrechterhält, ein authentischer Ausdruck von zwei gegensätzlichen Terroirs, die dennoch funktional für ein Qualitätsdesign sind, weil sie sich genau ergänzen. Die ökologisch nachhaltige Produktion von Baglio di Pianetto, die durch die Umstellung des gesamten landwirtschaftlichen Betriebs (ca. 160 ha) auf biologischen Anbau bestätigt und verstärkt wird, ist auch Ausdruck der Aufmerksamkeit, die den Ansprüchen der Liebhaber gewidmet wird, die wissen wollen, was sie kaufen und trinken - eine Sorge um die Verbraucher, die immer vielfältiger und weltweit verbreitet ist. Soil composition The vines from which these grapes originate are grown in soils with different compositions, ranging from medium-textured and silty to clay soil.
Wine making Vinification of Viafrancia Bianco begins by harvesting the grapes by hand; this is followed by a short resting phase in a cold room. The grapes are then gently pressed at low temperatures in an oxygen-free environment to preserve their aromatic integrity. Alcoholic fermentation takes place in a controlled manner, partly in steel tanks and partly in first and second passage French oak barrels. This choice lets us obtain the perfect aromatic harmony and gustatory complexity, preserving the freshness and purity of the aromas.
