Vinification Grapes from the oldest Chenin vineyard, planted in 1986, were harvested at four stages of ripeness to capture the full spectrum of Chenin blanc flavours. They were left on the skins overnight at a low temperature to extract all the flavours and concentrated sugars. After a year on the fermentation lees, in a combination of 400-litres and 225-litres French oak barrels, the wine presented a delicious layered fruit and rich depth of flavour.
Ageing 11 months of ageing. Combination of new and old 225-litres and 400-litres French oak barrels.
