Vinification |
The must remains in contact with the skins for a maximum of 15 minutes, giving the wine a slightly coppery colour and a delicate onion peel touch. To preserve the original aromas and freshness, fermentation is done with selected yeasts in stainless steel tanks. |
Ageing |
The wine rests on the lees for 5 months with pumping over twice a week for the first two months. |
