Soil composition |
The soils derived from the seabed have evolved, originating the characteristic "Ferretto", a very ancient land, but profoundly modified by the continuous percolation of the water which over time has transformed the ferrous minerals contained in blood-red oxides. The result is a scarlet earthy blanket with a distinctly acid reaction, poor in nutrients. |
Vinification |
Soft crushing and destemming of the grapes. Pressing with a pneumatic vacuum press, immediate draining of the must. All operations are carried out in an inert atmosphere. Cold static settling of the must and racking into the fermentation tank. Controlled low-temperature fermentation with selected yeast. Subsequent series of racking for natural clarification of the bases. |
Ageing |
Second fermentation in the autoclave at 16°C for 2 months. Cold rest at the end of fermentation for refinement and stabilization before bottling. The entire production process is carried out in an "inert atmosphere" therefore without contact with oxygen. This allows a drastic reduction in the use of sulphites, obtaining a healthier and more long-lasting product. |
Pairing |
A wine for any occasion. Its small residual sugar makes it excellent as an apéritif, but it pairs well with appetisers and first courses of fish, molluscs and crustaceans, delicate dishes of vegetable and velvety soups, and tasty cheeses. |
