Rizzi Barbaresco Pajoré 2020
Barbaresco Pajorè comes from grapes grown in the Pajorè Cru. Bordering on the town of Barbaresco, Pajorè is rightfully among the most renowned cru of the Langa. The vineyard, of about 3 hectares, is situated in the heart of the cru and enjoys an almost perfect elevation. In addition, this vineyard benefits from a splendid southern position and very poor marly soils.

Colour

Deep ruby red.

Bouquet

Rich and complex with an intense floral component of violets and roses, as well as fruity notes of red fruit, raspberry and strawberry, finishing with spicy notes of leather, black pepper, cloves, and liquorice.

Flavour

Full-bodied, elegant, and well-balanced, with a nice powerful tannic structure. This Barbaresco combines finesse, strength, elegance and minerality.

Pairing

Pasta dishes with savoury sauces, red meat, lamb, braised beef, large roasts, and mature cheeses. A superb wine with dishes enriched with white Alba truffle.

Vinification Fermentation and maceration are carried out in stainless steel tanks at controlled temperatures not above 30°C for about 25-30 days. It then follows malolactic fermentation which lasts for about a month.
Ageing The ageing lasts 12 months in Slavonian oak casks, then in concrete vats for further 8 months. It then refines in the bottle a few months before being marketed 3 years after harvesting.
