Vinification |
Grapes are hand-picked then, after being destemmed, are softly pressed. Fermentation temperature is controlled in thermo-conditioned tanks at 30°C. It macerates for 10 days with racking of the product only when all the sugar has been converted into alcohol. |
Ageing |
The wine is aged for two years in Slavonian and medium French oak barrels, then an additional year in concrete tanks that are insulated with cork and lined with fibreglass. The wine is then aged for additional 24 months in bottles before being marketed as a Riserva. |
Pairing |
Rich, dry and deep in flavour, Barolo pairs well with red meats and spicy cheeses. |
