Vinification |
The pressed grapes are subjected to cryomaceration at 10°C for 4 hours. Subsequently, 20% of the must is fermented in new Tonneaux at a temperature of 18 – 20 °C, while the remaining 80% of the must ferments in steel at 14 – 16 °C. |
Pairing |
Excellent with mezze sleeves with swordfish and capers, or combined with turbot with potatoes. |
