The bunches are then quickly carried to the wine factory, where they are gently pressed. After an initial racking, the first must is pumped into temperature-controlled vats for fermentation. |
陳年 |
The wine is kept on its lees for at least 8 months before bottling, and 8-9 months after harvest. |
匹配 |
Ideal with vegetables, particularly with spring vegetables: asparagus, nettle, hops, silene for use in risottos and omelettes. It pairs well with shellfish: cicadas, prawns, scampi, and lobsters because its minerality enhances their flavour. This wine also pairs with "Prosciutto di San Dianiele", the typical ham of Friuli-Venezia Giulia. |
