By hand, with the selection of only healthy, perfectly ripe clusters, picked into small, aerated crates. It occurs the first half of August, beginning with Pinot Blanc, then Pinot Noir, and concluding with Chardonnay. |

After harvesting, grapes are crushed within 3 hours. Separate pressing of the three grape varieties with limited yields (50%) and use of the first must only. Fermentation with selected yeasts at a controlled temperature of 16-18°C, 70% in concrete vats and 30% in oak barrels of several passages. |
陈年 |
The second fermentation occurs in the spring following the harvest. Minimum 85 months on the lees in the bottle and at least 6 months after disgorgement. |
