收成	Grape selection and harvesting are made by hand during the last two weeks of September to encourage perfect grape ripening.
酿造	Before ageing, the Valpolicella is macerated on the marcs of freshly drawn Amarone and left to rest for about 15-20 days.
陈年	It then matures in 500-1000 litre oak casks for 18 months, followed by bottle refinement until it reaches optimum maturity.
