The whole clusters, all from the same vintage year, are pressed very gently, and only the first must is employed. When the initial fermentation is complete, a liqueur e tirage is added, and the wine is bottled in the classic dark-green champagne-style bottles. For the tirage, the bottles of Equipe5 are stacked horizontally in the underground cellars of Borgo Rocca Sveva, where the wine undergoes a slow secondary fermentation. |

After an ageing of over 36 months, the bottles are riddled in the traditional fashion. Finally, the bottles are disgorged and the liqueur d’expedition is added: Equipe5 is now ready to be tasted. |
