Ageing |
The base wine will be bottled together with selected yeasts and sugars the following spring when it is ready; it will remain on the lees for at least 30 months. At the time of disgorging, the intervention is minimal, so that the fresh flavours and scents of the freshly harvested grapes will be returned almost intact in the glass. |

Perfect as an aperitif, it proves excellent for accompanying and enhancing fish dishes. |
