Soil composition |
The subsoil is of the BATHONIAN type, middle of the Jurassic period, it is hard limestone that can be found throughout Burgundy. The soil: 50 cm to 1 m of clay-limestone. These are clayey silts in colluvium on an alteration of pure silts very calcareous and rich in silica which confer to the wines a beautiful minerality. |
Harvest |
Hand-picked with sorting on the vine and on the table if necessary. |
Vinification |
Slow pressing. Settling for 6 to 18 hours. Fermentation in tanks with indigenous yeasts, without SO2. |
Ageing |
Aged on lees for 30 months with 2g of SO2 at racking and 2g after filtration. Light filtration. |
