Cavit Altemasi Graal Riserva 2009
Elegant Reserve Millesimato classic sparkling wine that Cavit produces only with the grapes of the great vintages. Graal derives from the medieval Latin with the meaning of container, this name has gained notoriety in the cycle of novels of King Arthur since it is associated with the cup used by Jesus during the last supper.

Perlage

White foam with fine, continuous perlage.

Colour

Straw yellow in colour with greenish tinges.

Bouquet

A complex, well-defined nose with hints of apple and peach, accompanied by sweet hints of almond.

Flavour

Balanced and rounded on the palate. A marked level of acidity brings the backbone, structure and great persistence to the fore.

Pairing

Roasted fish, white meats, cheeses and stuffed pasta.

Origin The highest hilly areas and those most suited to producing grapes for sparkling wine in Trentino (the hills around Trento, the Brentonico plateau and the Valley of the Lakes).
Climate Altitude: 500-600 m. a.s.l.
Soil composition Medium-heavy fluvio-glacial and volcanic soils, generally fairly shallow.
Vinification The perfectly ripened grapes were harvested manually in small crates and sent to be gently pressed. Fermentation was carried out under controlled temperature in stainless steel and barriques.
Ageing The second fermentation took place in April after the base wine had been left for a period to mature. Degorgement took place 70 months after tirage.
