The "Castagnino" was born from the desire to experiment at 360 degrees the potential of the Syrah grape variety in Cortona, declined in all its different expressions; in this case, we wanted to produce a Syrah with completely different characteristics from those of the main company wine (Il Castagno, his "older" brother) and, for this reason, the "Castagnino" does not mature in wooden barrels but only in steel and concrete tanks.

In the mouth it is tasty, fragrant and balanced, has good structure and considerable concentration, combined with lively and pleasant acidity.

Vinification After an extremely soft crushing and destemming (which leaves the grapes almost intact), the alcoholic fermentation takes place (usually spontaneously, thanks to the native yeasts) in steel tanks at controlled temperature, for about 15 days; the subsequent maceration of the skins lasts another one to two weeks. The malolactic fermentation (of the must alone as the wine obtained from the pressing of the marc is never used for the production of our wines) takes place spontaneously, without inoculation of bacteria.
Affinage This is followed by a short period of aging on the noble lees in vitrified cement barrels.
