Description
Wines from Les Couarres open up over time. These are certainly the wines that require the most rigour when overseeing their maturation. Their delicate and sticky 'clay' texture means that rapid oxygen uptake must be avoided as much as possible during the aging process. Wines from Les Couarres are marked by a spherical "stickiness" on the palate, followed by freshness with medium acidity throughout the finish. The differences between the tufa part and the clay part principally concern an environment that is for stony for one (tufa), and cooler and tauter for the other (clay).
