"Chicu" était le "stranome" du grand-père Ernesto, le fondateur de la cave. Il était connu sous ce nom par les habitants des Langhe et du Roero, conformément à la tradition locale. De lui, il est passé au père Federico, à nous et à nos enfants, et il continue aujourd'hui à représenter les nouvelles générations de la famille Faccenda : "On nous a toujours appelés les Chicu, ou les Chicco. Vinification After harvesting, the grapes are immediately cold pressed followed by the first fermentation that enhances its characteristic notes. Subsequent to a period of several months in stainless steel, bottling is carried out for the second fermentation and prise de mousse at a temperature of 14 °C.
Vieillissement 36 months in bottle on its own yeasts at 12 - 13 °C.
