What kind of wine it is
Cecubo Roccamonfina is a still red wine that expresses the Campanian winemaking identity of the Roccamonfina area. This blend of native grapes harmoniously combines Abbuoto, Piedirosso and Primitivo, presenting itself in the glass with a deep, dark red colour. The bouquet is clear and evokes intense plum aromas and wild berries, well integrated with spicy notes of vanilla, cocoa, liquorice and tobacco. On the palate, it reveals an elegant profile and a solid structure, offering a silky texture that envelops the mouth thanks to velvety, sweet tannins, ensuring a long and perfectly balanced finish.
Where it comes from
This red originates from the Campanian vineyards of the Tenute di San Castrese in Sessa Aurunca, an area historically suited to viticulture. The soil is characterised by a pronounced volcanic matrix, particularly rich in phosphorus, potassium and microelements that deeply nourish the vine roots. The entire estate faithfully interprets the characteristics of this terroir, reflecting the work of Villa Matilde. Strict grape selection and low yields in the field allow the energy of the volcanic soil to be transferred into the glass, defining a sip that clearly conveys the true essence of Roccamonfina.
How it is produced
The production cycle begins with careful manual harvesting of the bunches, which are immediately subjected to gentle crushing to preserve the aromatic integrity of the fruit. The must ferments at a controlled temperature in contact with the skins, optimising the extraction of colour and polyphenolic matter. Once this process is complete, malolactic fermentation takes place before the maturation phase begins. Ageing lasts twelve months in Allier oak barrels, one third of which are new, allowing the components to stabilise and the integration of toasted notes to be defined. This period in wood builds an important structure and ensures remarkable ageing potential.

Today, the company is run by Francesco Paolo's children, Maria Ida and Salvatore Avallone, with exclusive dedication to continuing their father's dream and project, taking up the important inheritance and looking even further. From the Ager Falernus, they have gone as far as the province of Avellino with new vineyards, new projects and wines that tell of the strong identity of Campania Felix.
