San Giusto a Rentennano (name of Etruscan origin), is set high on the river Arbia in the southernmost part of Chianti Classico. Ancient Cistercian monastery (hence formerly called San Giusto alle Monache), then indomitable fortress, was marked on the border, according to a treaty of 1204, between the counties of Siena and Florence. Guelph battlements of the castle remain of the wall, the massive walls and Barbican underground cellars, still used for aging wine in barrels. | Production technique | Crushing is carried out daily, and the oil is extracted using a cold‑press system at controlled temperature, protected from oxygen. The oil is then bottled in dark glass and sealed with a dedicated cap after a light filtration. The particularly favorable summer climate allows olive cultivation with minimal antiparasitic treatments. When stored under optimal conditions, the extra virgin olive oil of San Giusto a Rentennano maintains its freshness and intensity for 24 months. |
