Where it comes from
The vineyards are located in the picturesque landscapes of La Tour, in the municipality of Aymavilles. Here, the roots delve into morainic and sandy soils, situated on steep, south-facing slopes at around 650 metres above sea level, in a context of true heroic viticulture. The alpine climate, with its harsh winters and marked temperature variations, is essential for giving the wine extraordinary expressive freshness and a clear mineral texture.
How it is produced
The production process begins in mid-October with a careful manual harvest. After destemming, the grapes undergo cryomaceration and ferment in stainless steel tanks at a controlled temperature, with frequent punching down. Ageing takes place mainly in steel, although the maturation process may include a period in French oak barrels, before the final rest in the bottle. The result is a wine that releases intense aromas of morello cherry and violet, accompanied by elegant hints of green pepper.
