Aging The harvest time for the Sauvignon Blanc and Sémillon was chosen by seeking a balance between sugar concentration and maximum expression of the varietal aromas of the grapes. The bunches, harvested by hand, were immediately transferred to the cellar and cooled by passing them through a refrigerated conveyor which, by lowering the temperature before pressing, preserved the characteristic varietal aromas. After soft pressing, the musts, kept for a few hours at a temperature of 10 °C to allow natural clarification, were transferred to stainless steel tanks, where alcoholic fermentation took place at a temperature not exceeding 16 °C. Once this was completed, the wine was stored at a temperature of around 10 °C to prevent malolactic fermentation from taking place and to preserve its organoleptic characteristics. The two varieties were then blended so that one could 'complete' the other.

Description

Still white IGT Umbria, 12% ABV, produced by Castello della Sala (Antinori). Blend of Sauvignon and Sémillon. 0.75 L bottle, 2024 vintage. A white wine made in Umbria, a few kilometers from Orvieto, by the historic Antinori winery. The vineyards used for Conte della Vipera are located at altitudes ranging from 250 to 350 meters above sea level on soil rich in marine fossil sediments. The Sauvignon Blanc harvest began in late August and concluded with the Sémillon harvest in mid-September. It is characterized by citrus notes of grapefruit that harmonize well with aromas of aromatic herbs and elderflower. Straw yellow with greenish highlights. The fruity aromas and delicate mineral sensations blend harmoniously, with a decisive and persistent finish.

Castello della Sala is located in Umbria, a short distance from the Tuscan border, about 18 kilometers from the historic city of Orvieto. Castello della Sala, a magnificent medieval manor with 600 hectares (1482 acres) of land 229 (566 acres) of which are planted with vineyards, is located halfway between the Paglia river and the summit of Monte Nibbio.

The estate’s 229 hectares (566 acres) of vineyards are located at an altitude of 220 - 470 meters above sea level (722-1542 feet) and are planted with traditional varieties such as Procanico and Grechetto but also with Chardonnay, Sauvignon Blanc, Sèmillon, Pinot Blanc, Viognier and a small quantity of Traminer and Riesling.

The region is exceptional for producing white varieties with one exception, Pinot Noir, that has found ideal conditions in this terroir to best express its full potential. The vines grow in clay and calcareous based soils, rich in fossil shells, and they are well exposed to the rising of the sun with an excellent difference of temperature between day and night.

Harvest The harvest of Sauvignon Blanc began towards the end of August and ended with the harvest of Sémillon in mid-September. The grapes were healthy, ripe and characterised by excellent freshness and an excellent aromatic profile.
