How it is produced
The production process begins with manual harvesting, followed by the traditional appassimento method. The bunches rest for months in drying rooms, concentrating sugars and aromas. The grapes are then pressed and undergo a slow fermentation in steel tanks. The evolution is completed with a long maturation of thirty-six months in wooden casks and barriques. This ageing gives the wine a silky structure and great harmony.
