The rows reach high altitudes in the coolest parts of the denomination, with optimal exposure to the south, east and west. How is it produced
The management of the vineyards follows the principles of heroic viticulture, with all work and harvesting carried out entirely by hand between late September and early October. The vines are trained using the double arched cane system. The secondary fermentation takes place using the Charmat Method, with a thirty-day refermentation.
