Chateau de Pellehaut
Built in the 18th century, Chateau de Pellehaut is located in the Ténaréze appellation, an Armagnac cru on the border of the Bas-Armagnac region. Chateau de Pellehaut is a Single Estate Armagnac, i.e. it follows the entire production process from the vineyard and buys neither wine nor Armagnac from negociants. The oldest vines were planted between 1970 and 1975 exclusively to Ugni Blanc while the Folle Blanche was planted between 1990 and 1992. The company does not use any herbicides and is certified HVE3 (High Environmental Value). Harvesting is mechanised, carried out at night, and the must is fermented at a low temperature. The wine is then distilled with the yeasts in a traditional "alambic armagnacais", i.e. a single column still, at an alcohol content of between 56% and 60%. The distillate is then matured in the Chateau in 400-litre barrels made from wood from both Gascony and the Limousin forest.
