Before Agualevada, Iago played in football with Division II with Xavi Seoane (Fazenda Pradio), studied organic farming and was fascinated by biodynamics. After falling in love with a terraced slope hidden in a forest valley behind the ancient Monasterio de San Clodio, he bought the land and built a winery on the spot.
Sheep and cattle graze thick grass among the vineyards of Iago Garrido on a terraced slope. Healthy virgin soils produce exceptionally bright and refreshing treixadura, which ferments with other native Galician white vines to become its traditional field blend.
Iago calls its wines "vinos de raíz" or wines of the root, referring to their salty nature and determined by the terroir, and that often enjoys them better on what the biodynamic calendar calls "radical days".
