Description
What kind of wine it is
J. Hofstätter's Sauvignon is a still white wine from the Dolomite Vineyards with an intense aromatic profile, produced in Trentino-Alto Adige. This interpretation by J. Hofstätter enhances the Sauvignon grape with pronounced mineral freshness and lively acidity. On the palate, it stands out for its slender yet well-structured body, faithfully reflecting the Alpine character of the Dolomites. Fermentation in steel tanks delivers a clean and harmonious sip, led by well-defined varietal notes that lead to an elegant and satisfying persistence on the palate.
Where it comes from
The grapes are grown on the Maso Michei estate, located above the village of Ala, within the Dolomite Vineyards. The high-altitude vineyards, situated between 820 and 900 metres, benefit from a cool mountain climate with marked temperature variations, which encourage slow ripening, essential for aromatic development. The vines sink their roots into mixed soils composed of clay, porphyry, gravel and limestone. This geological complexity gives the wine a pronounced savoury imprint, outlining a vertical, linear profile with great territorial fidelity.
How it is produced
The production process involves an eight-hour skin maceration, ideal for extracting the best aromatic components, followed by gentle pressing. Fermentation and maturation take place in steel tanks, thus preserving the natural acidic tension. Visually, the wine displays a straw yellow hue with greenish reflections. The bouquet releases hints of gooseberry, elderflower and nettle, accompanied by nuances of flint. The tasting is dynamic, led by a citrusy note of grapefruit and green apple that flows into a pleasantly herbaceous finish.
