What kind of wine it is

The Sauvignon by Franz Haas is a refined still white wine that captures the essence of Alto Adige. It appears a pale straw yellow with greenish highlights, offering on the nose notes of elderflower, white peach, dried fruit and enveloping oriental aromas. On the palate, a lively, savoury acidity emerges, balanced by a clear mineral streak and a persistent finish. Served between 12 and 14 degrees, it pairs beautifully with tuna tartare, white meats and spicy Asian dishes.

Where it comes from

The Sauvignon grapes grow in Alto Adige at altitudes between 400 and 800 metres, cultivated using the Guyot system. The excellent south and south-west exposure encourages regular ripening, while the dolomitic soils, formed from rock erosion, give the wine a distinct savoury drive. For over a century, Franz Haas has pursued agronomic excellence across sixty hectares of vineyards. The expert guidance of oenologist Stefano Tiefenthaler takes advantage of the altitude to preserve strict aromatic precision, outlining a defined and clean territorial identity.

How it is produced

The production process begins with gentle pressing of the bunches, preceded by an overnight maceration at low temperatures to extract the most delicate aromatic components. Fermentation is divided between stainless steel tanks and small wooden barrels, combining varietal freshness with a solid structure. The wine then matures in the same containers for about eight months in contact with the fine lees. This sur lie ageing gives the sip lasting fullness and elegance.
