The soil is characterised by a sandy terrain formed from the disintegration of porphyritic rocks, enriched by ancient sediments of granite, basalt, and glacial-era gneiss. This geological matrix, typical of the mountainous environment, imparts a pronounced minerality and a tense flavour profile to the wine, precisely reflecting its place of origin.
How it is produced
Production is distinguished by a double harvest period: the first picking preserves acidity, while the second enhances body and aromatic intensity. In the winery, the grapes undergo gentle gravity processing to minimise mechanical stress before pressing. This is followed by natural cold sedimentation of the must for forty-eight hours, preceding a slow and strictly controlled fermentation. Finally, the wine matures through a slow decantation until spring arrives, an essential step to stabilise the structure and define the overall elegance of the sip.
