Description
What kind of wine it is
The Bourgogne Aligoté Vieilles Vignes by Fabien Coche is an organic still white wine that clearly expresses the character of Burgundy. Made exclusively from Aligoté grapes, it appears in the glass with an intense straw yellow colour. The aromatic profile is led by delicate floral notes, enriched by lively citrus nuances that precede a taut and highly harmonious sip. On the palate, it is fresh and balanced, supported by a good structure that ensures an ageing potential estimated between five and ten years. The choice to proceed with unfiltered bottling preserves the expressiveness of the fruit, delivering a precise wine with a strong sense of place.
Where it comes from
This wine originates in France, in the Burgundy region. Production is based in Meursault, in the Côte d’Or, where the Fabien Coche family estate manages twelve hectares of vineyards. The grapes come from old vines cultivated using organic methods to preserve the nature of the soil, giving the wine a distinct territorial character.
How it is produced
The wine is produced following organic practices and traditional methods in the cellar. After harvesting, the wine rests before bottling, which takes place without any filtration to preserve its complexity. A serving temperature between 8 and 10°C is recommended. At the table, it pairs perfectly with shellfish, lean or fatty fish dishes, and cheese selections.
