Description
What kind of wine it is
Collio Ribolla Gialla by Doro Princic is a still white wine that elegantly expresses the qualities of Ribolla Gialla. It displays a straw yellow colour with greenish highlights and releases a pleasant and alluring bouquet, characterised by notes of acacia, woodland nuances and subtle hints of oak. On the palate, it is dynamic, supported by a marked freshness, clear savouriness and a long, persistent finish. Thanks to its balance, it is the ideal companion for fish dishes, shellfish, white meats and cheeses.
Where it comes from
This white wine originates from the hills of Pradis, in the heart of the Friulian Collio. The vineyards tended by Doro Princic take root in marl soil, a distinctive element that imparts pronounced minerality to the grapes. The agronomic management respects the essence of the Cormons area and its unique microclimate, encouraging optimal ripening of the grapes. The result is a glass with a strong territorial identity, offering a clean aromatic profile and a sip deeply connected to its land of origin.
How it is produced
The production process begins with a careful manual harvest, carried out in the early hours of the morning to preserve the aromatic integrity of the grapes. After gentle pressing of the whole bunches, the free-run must ferments in temperature-controlled tanks to maintain the fragrance of the aromas. The wine then undergoes a slow ageing on fine lees for at least eight months: an essential resting period to enrich the structure of the sip and give complexity and persistence to the drink.
History and Curiosities
Since 1960, the Doro Princic winery has been devotedly cultivating vineyards on the hills of Pradis, continuing a family tradition focused on excellence. The artisanal cellar practices, overseen by Alessandro Princic, include ageing on fine lees for at least eight months, giving this Ribolla Gialla a seductive bouquet of acacia and a fresh, long-lasting palate, an authentic expression of the region.

Self-taught winemakers held at the mercy of good will but also in technical defect that still practice the thanks. Faced without awe the experience of the bottle in the wake of new incentives offered in the seventies by meritorious Consortium DOC Collio.
Finally he found the son Alessandro (as that will result in the wife Mariagrazia) the ideal partner for the definitive success of one of the most family farms listed Collio projected sharply with the bottle of quality to the domestic market (50%) and foreign (25%).
The pride of Princic is the Collio Pinot Bianco that the average of the last five years with 60 tons of grapes per hectare went bottles to more than 13 ° and a challenging natural dry extract of greater than 20 g / l to ensure freshness "all-steel" with hints of fresh fruit yeast wildflowers unforgettable. The future of professional Princic will ensure continuity with the young Carlo now student of oenology but ready to seize grandfatherly Doro those many little secrets that are found only the typical cellars of Collio.
