The roots draw nourishment from clay-limestone soils rich in Kimmeridgian marl and flint fragments. This particular geological composition gives the wine a deep mineral character, providing tension and a gustatory precision that allows for a fascinating evolution over time.
How it is produced
Manual harvesting is aimed at preserving the fragrance of the bunches. In the cellar, after direct pressing and a short settling period, fermentation occurs spontaneously thanks to indigenous yeasts. The process takes place across stainless steel tanks, wooden vats and barrels. The subsequent ageing on fine lees lasts eight months and takes place in the same containers, imparting structure and complexity without weighing down the palate. The result is a sip of great aromatic purity, with a persistent, crisp and refreshing finish.
