Wine making | Fermentation starts spontaneously and takes place at a controlled temperature of 28-30 °C for about 13 5 days. During this period, frequent and gentle pumping over allows the colour, noble tannins and most aromatic components to be gently extracted from the skins. Racking off takes place only when alcoholic fermentation is complete. Malolactic fermentation begins and is completed spontaneously before spring. |
Aging | Maturation in small oak casks of 25 and 35 hectolitres for 11 months allows the wine to fully evolve, stabilising the colour and refining the tannic sensation and aromas typical of this wine. |
