| Vinification |
The Trentodoc Spumante which combines the elegance of Chardonnay with the structure of Pinot Noir. We ferment Chardonnay grapes strictly as white wine, the Pinot Noir grapes have a first fermentation on the grapes for washing-out some color, followed by pressing. With that we obtain the characteristic pink shade of our Valentini Rosé. |
| Ageing |
In Spring after harvesting we prepare the blend and fill this wine in bottles, where it remains for at least 24 month for the second fermentation. Hereafter we proceed with the last step of champagne method by adding a small quantity of “liquer d’expedition”. |

Best with fish courses, baked or salt encrusted dishes. |
