By hand, with boxes to ensure the grapes' integrity until pressing. Grapes underwent tip cutting and thinning in July. |
Vinification |
The first fermentation is conducted partly in barriques and partly in steel. The method used for the second fermentation is the classic Trentodoc method. |
Ageing |
Maturation on the lees lasts at least 48 months to achieve an otherwise unattainable elegance. No 'dosage' is added at disgorgement so as not to alter the characteristics conferred naturally by favourable environmental factors, time, and careful craftsmanship. |
Pairing |
Like any classy Trentodoc sparkling wine, it is excellent as an apéritif and can be enjoyed throughout a meal. |
