Harvest |
The grapes are harvested in mid-October, however influenced by the weather conditions of the year. |
Vinification |
After crushing, fermentation in stainless steel at controlled temperature (28-30 °C) for a duration of 10-12 days, until complete fermentation, frequent pumping over and subsequent malolactic fermentation, transfer to oak barrels for ageing. |
Ageing |
16-18 months in large Slavonian oak casks of 25 hectolitres. |
Pairing |
Superb with game, braised beef and the great meat dishes of the Piedmontese tradition. Excellent with white Alba truffle dishes such as cardoon pie with fondue and game ravioli. A great meditation wine. |
