Vinification |
Light maceration at a low temperature to give more character and more complexity. Low temperature fermentation with indigenous yeasts and, after the winter season’s break in which lies on fermentation yeasts with repeated pumping, is put directly into the bottle where it rests for few months before being put on the market. |
