Soil composition Different types of clay-limestone soil profiles ranging from more or less deep marl to shallow hard limestone shallow hard limestone, through to the lighter soils of the limestone limestone.
Harvest Hand-picked, whole bunches taken to the press.
Vinification Direct pressing. Vinification without sulphur, using indigenous yeasts. Light settling.
Ageing On fine lees in 500-litre oak barrels (4 to 6 wines) for 40% for 10 months, the rest in a blend of concrete and stainless steel vats. Light filtration on white earth.
