Climate	Situated at the highest level, this south-east facing climate is generally early in harvesting. The sloping soil of brown limestone is shallow.
Soil composition	Clayey limestone.
Harvest	By hand.
Vinification	21 days of fermentation on the skins at a cold temperature. Upon arrival in the winery, the grapes are carefully selected to keep only healthy grapes at optimal ripeness.
Ageing	16 months, of which 3 months in stainless steel tanks, in 100% oak barrels of which 30% are new.
Allergens	Contains sulphites
Pairing	Ideal with red meat cooked in sauce, game, eggs known as 'oeufs en meurette' and most cheeses.
