The Monkey is represented on the label of our longest-lived wine, GODENZA. The monkey interprets the stylistic choice of a wine that goes back to the origins of the traditions of Sangiovese. A wine with its feet firmly planted in its land, which faithfully recounts the ridge from which it comes. A vineyard with a very high presence of sandstone sand that lends a typical sapidity to the wine. |

Ochre-coloured clays and calcareous marls, with the presence of sand. |

Last week of September; hand-picked in 15 kg crates. |
Vinification |
The Sangiovese grapes (large-berry Sangiovese, Romagna biotype) of the different clones are harvested together and fermented in blends. Fermentation and subsequent maceration on the skins take place in steel vats at controlled temperature. The contact of the wine with the skins lasts on average 28 days; malolactic fermentation follows. |
Ageing |
8 months in steel vats and at least 12 months in bottle. |
