Harvest |
The harvest usually begins at the end of September. The grapes are selcted and hand-picked. |
Vinification |
The grapes are moved to the winery, destemmed and pressed. The temperature, during maceration, is around 20 °C. The fermentation takes place in inert vessels and last about 15 days. Temperature, during this phase, raises to 20-24 °C. At the end of fermentation, the wine is run off its skins, which are then softly pressed, and goes into inert vessels, until the wine making process of Amarone is finished. |
Ageing |
Then the wine made October, is poured on Amarone's marc and goes through a secondo fermentation, which lasts for about 15 days. The wine is then aged for 24 months in wood vessels. |
Pairing |
It pairs perfectly with grilled meat. Excellent with succulent main courses with pasta or risotto with pumpkin, sausages or mushrooms. It can be paired with cold cuts and cheeses. |
