Vinification |
Fermentation starts in temperature-controlled vats. The wine is decanted into barrels, 30% of which are new. It remains on the lees until the end of malolactic fermentation. |
Ageing |
Depending on the vintage, this wine may be aged longer, up to 12 months in barriques and 3 months in vats. After ageing and filtering, the wine is bottled. |
Pairing |
It pairs well with crustaceans, sweetbreads and slightly spicy sauces. |
