By vocation and tradition, the Valtellina is absolutely the territory of "red wines" of the noble Nebbiolo vine. For "whites" only one vine with the same lineage could be properly inserted: the Pinot Bianco. Like Nebbiolo, Pinot favours a subcontinental climate with a high temperature range, very clear and bright skies, but also fresh and medium-good fertility soils. To achieve all this, La Grazia has identified for its Pinot Bianco a vineyard placed in particular position and exposure, with terraces a little steep, less warm and with a north-west orientation. Hence the name of the wine: OPUL, which in the Tyrrhenian dialect means vineyard on the left bank of the Adda: the freshest part of the valley.

Colour

Bright and bright straw yellow.

Bouquet

Immediately fresh on the nose with floral and just officinal notes, accompanied by impressions of peach pulp and yellow fruits.

Flavour

The taste is immediately enveloping then dry and citrine, complex, with a slightly toasted finish.

Pairing

It can be an aperitif wine but also an ideal accompaniment to appetizers and fish.

Harvest At the beginning of September, the Pinot grape reaches the cellar, which is harvested in platinum.
Vinification The grapes stay for 5-7 days in a cold room to allow the pressing of the grapes well cold. Soft pressing follows and the must obtained passes, while still cold, into the tank to decant the heavy waste. After racking, partly in oak casks and barriques, the fermentation begins and continues slowly and regularly at low temperature. At the end of September the Rossola and Pignola grapes are harvested; they are pressed and pressed gently, so as not to tear the skins and to have a transparent must. Only after the start of fermentation of this must is the assembly with the Pinot and waiting for the completion of fermentation. This is followed by decanting and clarification until bottling in late spring.
