From carefully choosen grapes from the grandfather Emilio’s vineyard, in January the new wine is added for a few days in the pomace of Amarone and aged in oak barrels, to obtain a full-bodied, spiced wine.

Harvest	At the end of September with manual harvest and careful selection of the grapes that are deposited in wooden plateau.
Vinification	Fermentation in stainless steel tanks for about 9 days. After a few months fermentation is proceeded with Amarone skins for about 8 days, using continuous remontage process daily.
Ageing	12 months in French oak barrique and 10-12 months in bottle.
Allergens	Contains sulphites
Pairing	Suitable for every meat dishes, roast plates, game meat and mature cheeses.
