The weather pattern affecting this vintage was very distinctive. After a cold winter, July was hot, then August was cooler than normal. September and October were much warmer, with excess rainfall. The rainfall in mid-September allowed for a uniform and very widespread development of noble rot. |
Soil composition |
Sandy-gravelly, clay-sandy on limestone rocks with starfish. |
Vinification |
Once the grapes have been harvested, slow extraction of the juices is made by pneumatic presses. After a light settling of the juices, the musts ferment. |
Ageing |
In oak barrels, variable duration depending on the vintage. |
Pairing |
Ideal with creme caramel or creme brulée. |
